NEW DIM SUM MENU AT GINGER
Menu Features Mini Delicacies Crafted by Award-Winning Dim Sum Chef Ken Fong
NATIONAL HARBOR, MD. (November 22, 2017) – MGM National Harbor offers guests “a little bit of heart” with the introduction of an all-new dim sum menu at Ginger, the luxury resort’s top-rated Pan-Asian restaurant. Developed by award-winning chef Ken Fong – a dim sum specialist with 30 years of culinary expertise – the bite-sized delicacies consist of traditional favorites, including steamed roast pork buns and crystal shrimp dumplings, as well as original dishes, such as tri-color coconut jelly. The special menu will be served Friday through Sunday from 11 a.m. to 3 p.m.
Born and raised in Hong Kong, Chef Fong immigrated to the United States in 1989 where he embarked on his culinary career in Washington D.C.’s Chinatown. After establishing himself as a skilled chef of Chinese cuisine, he began to garner acclaim and accolades for his contributions to dim sum menus at some of the most popular local restaurants. Prior to joining Ginger, Chef Fong was the head dim sum chef at Fortune Restaurant in Falls Church, VA for six years followed by an eight-year stint at the recently relocated China Garden in Rosslyn, VA.
“It’s an honor to work with MGM National Harbor and Ginger to help introduce the culture of dim sum to their guests,” said Chef Fong. “This new menu is inspired by my memories of the restaurants I frequented as a child in Hong Kong, as well as the many different influences I’ve picked up throughout my career in the States. The goal is to offer a unique dining experience for those new to the cuisine as well as surprises for the dim sum aficionado.”

Ginger offers authentic cuisine from regions throughout Asia including Japanese, Chinese, Thai, Vietnamese and Korean menu selections. The concept was developed by a team of expert chefs from MGM Resorts’ properties in Las Vegas and named for a common ingredient found in all Asian cuisine. Warm organic wood interiors create an inviting space along with traditional and signature dishes, such as Peking Roast Duck and Sampan Spicy Crab, bringing memorable dining experiences for those seeking a genuine taste of Asian fare.
